This is an authentic white balsamic condiment from Acetaia Malpighi crafted exclusively from white Trebbiano grapes grown on the family estate in Modena. It’s aged for 5 years in ash-wood barrels, which gives it a bright, delicate, and refined flavor while preserving its pale, luminous color and fluid texture. Aged 8 years in petite ash barrels, Prelibato Riserva represents a more aged and sophisticated version of the classic Prelibato white balsamic. Like the standard white balsamic, it’s made from Trebbiano Modenese grapes, but the longer aging deepens its character and gives the dressing an enchanting golden hue and more pronounced complexity.
