The Story of The Balsamic Vinegar of Modena

A letter written in October 1850, in which Pietro Malpighi transcribed the recipe for making "true and genuine natural vinegar". The letter was addressed to his son Augusto: this is where our family history begins. 

The original letter certifying this ancient tradition, as well as an excerpt from the letter, can be seen below:

"Augusto my dear son, I think that the most condensed and expressive conclusion of my notebook is to give a recipe for making 'true and genuine natural vinegar', a recipe distilled from what I have been explaining. 
At least five vassels of good wood, concentrated genuine grape must, mother of good and thick vinegar aged for a long time, and my dear son the time I hope the Lord will give you so that you and your descendants may taste this balm".
