Gold IGP is a high density balsamic vinegar, consisting of 80% aged grape must and only 20% unaged wine vinegar. It's a thick, viscous balsamic vinegar, having been aged for over 15 years. A completely natural product, there are no artificial colors, additives, or preservatives. It has a deep, rich flavor, with notes of cherry and plum. Our favorite use is for next-level salad dressings and drizzles.
About Acetaia Malpigha
Dating back to 1850, the fifth generation of the Malpighi Family still owns and operates the company to this day. Their mission has always been to produce "real and genuine natural vinegar." The grapes are grown in their own vineyard, absorbing the unique terroir of Modena, Italy. The harvested grapes are then crushed and prepared right there on the family farm, going from earth to barrel to bottle, all in one place.
Tips For Use
It gives the best of itself on Parmesan cheese flakes and pears, fresh strawberries, risotto and scaloppine, foie gras, pancakes with pumpkin flowers, meat carpaccio and fish tartare, sushi and sashimi.
